The invention provides a processing method of donkey-hide gelatin biscuits. The processing method comprises the following steps: heating and stirring donkey-hide gelatin until the donkey-hide gelatin completely melts to obtain donkey-hide gelatin liquid, adding honey and skim milk powder, and continuously stirring the liquid to obtain a pasty substance; preparing a prefabricated aqueous solution from table salt, baking soda, ammonium bicarbonate and purified water; uniformly mixing sweet potato starch, corn starch, wheat flour, skim milk powder, eggs, olive oil and white granulated sugar to obtain a mixed raw material a; adding the prefabricated aqueous solution of which the volume is 1-1.5 times of the mass of the mixed raw material a into the mixed raw material a, and uniformly stirring the aqueous solution to obtain a mixed raw material b; adding the prefabricated aqueous solution of which the volume is 2-3 times of the mass of the pasty substance into the pasty substance, and uniformly stirring the aqueous solution to obtain a mixed raw material c; adding the mixed raw material b into the mixed raw material c, and uniformly stirring the mixed raw material b and the mixed raw material c to obtain a mixed raw material d; and then, carrying out pressing, embossing and baking to obtain the donkey-hide gelatin biscuits. The donkey-hide gelatin biscuits prepared by the processing method provided by the invention have health care effects of the donkey-hide gelatin, can be independently packaged, can be eaten at any time, and have the advantages of being instant and convenient and being carried about.
