The invention provides a processing method of banana-flavored biscuits. The method comprises the following steps: removing banana peel, then cutting bananas into sections, baking the banana sections until the banana sections are soft, and pulping the soft banana sections into pulp for later use; mixing wheat flour and purified water into dough; sealing the dough with a preservative bag, and preserving the sealed dough at the constant temperature of 30-40 DEG C for 30-40min so as to obtain a prefabricated material a; preparing a prefabricated water solution by adopting table salt, baking soda, ammonium bicarbonate and purified water; uniformly mixing sweet potato starch, corn starch, wheat flour, skim milk powder, eggs, olive oil and white granulated sugar so as to obtain a mixed raw material a; adding the prefabricated water solution, and kneading the prefabricated water solution with the prefabricated material a so as to obtain a prefabricated material b; pressing the prefabricated material b so as to obtain wrappers, and punching and embossing the wrappers into biscuit flans; baking the biscuit flans at the temperature of 150-200 DEG C for 15-20min; and taking the biscuit flans out, and cooling the biscuit flans so as to obtain the banana-flavored biscuits. The biscuits prepared by the processing method of the banana-flavored biscuits have natural banana fragrance, fragrant and sweet flavor and long aftertaste, contain nutritional ingredients of bananas, are beneficial to the brain, are capable of preventing nervous fatigue, and have the effects of moistening the lung to relieve cough as well as preventing constipation.
