The invention belongs to the technical field of preparation of seasonings, and particularly relates to a preparation technology of a fruity-fragrance olive Char Siu sauce. The preparation technology comprises the following preparation steps of (1) selecting fresh plump olives, thoroughly cleaning the selected olives, baking the cleaned olives, and removing kernels; (2) putting the olives after kernel removal into a high-pressure tank, performing pressurizing, maintaining the pressure, performing pressurizing once again, maintaining the pressure, performing depressurizing, and maintaining the pressure; (3) taking fresh pork, mincing the taken pork, putting an oyster sauce and table salt, performing stirring, and performing preserving so as to obtain ground pork; (4) putting olive oil to a pot, putting the ground pork, performing stir-frying, then adding olives obtained in the step (2), performing stir-frying, adding water, performing boiling over, maintaining the boiling-over state, performing cooling, and performing grinding with a colloid mill so as to obtain paste substances; and (5) placing the paste substances into a magnetic field, enabling the paste substances in the magneticfield for 6-10h, performing filling, performing sealing, and performing sterilization so as to obtain the fruity-fragrance olive Char Siu sauce. The olive Char Siu sauce prepared by the method disclosed by the invention can maintain the fruity fragrance of the olives, and is excellent in fragrance; besides, nutrient components are easy to absorb; and through cooperation with pork for use, the fragrance is richer, and the fruity-fragrance olive Char Siu sauce is extremely easy to accept by common people.
