The invention provides a preparation method of canned marine vegetables. The preparation method comprises the following steps of (1) thoroughly cleaning new kelp, sarcodia montagneana, suaeda glauca,asparagus and salieornia bigelovii, performing cutting up, then putting the new kelp, the sarcodia montagneana, the suaeda glauca, the asparagus, and the salieornia bigelovii which are cut up in a pot, performing heating for boiling with spice together, and then performing taking out to obtain mixed foods A; (2) adding components in parts by weight of zanthoxylum oil, olive oil, monosodium glutamate, table salt, spice, chili powder, a food additive and the mixed foods A to a vacuum mixer, and under the vacuum condition, performing uniform stirring to obtain a mixture B; (3) canning the mixtureB, and performing sealing with a vacuum sealing machine; and (4) sterilizing the cans sealed in step (3) by a low-temperature sterilizing method, controlling the temperature to be 90 DEG C or below,and performing cooling to obtain the canned marine vegetables. The preparation method is simple and convenient to operate, the canned marine vegetables are rich in nutrition, and crisp and tender in mouth feel, protein and amino acids can be effectively complemented, and the digestive absorption by human bodies can be promoted.
