The invention provides pleurotus eryngii cookies. The pleurotus eryngii cookies are prepared according to the following steps of: weighing the raw materials according to the weight, and washing the pleurotus eryngii; mixing the pleurotus eryngii, the skimmed milk powder, the xylitol, the flour, the olive oil, the eggs, the baking soda, the table salt and the butter according to the proportion of a formula and grinding, and stirring for 1.5 hours at the temperature of minus 10 DEG C; putting stirred cookie blanks in a mold, putting the mold in an oven, and baking for 50 minutes at the temperature of 120 DEG C; and taking out the baked cookies, cooling and packaging. The pleurotus eryngii cookies have the effects of expelling wind and clearing away cold, relaxing the muscles and stimulating the blood circulation and lowering blood pressure and blood glucose.
