The invention discloses pickled rod chili broad beans which are prepared from the following raw materials in parts by weight: 100 parts of broad beans, 20-30 parts of nutrition powder, 20-40 parts of crucian carp soup, 5-15 parts of pickled rod chilies, 8-15 parts of olive oil, 5-15 parts of white sugar, 3-6 parts of gardenia, 1-5 parts of medlar, 3-8 parts of chives, 1-5 parts of peppers, 5-10 parts of pericarpium citri reticulatae, 1-5 parts of cinnamon, 5-10 parts of maltitol and 10-20 parts of table salt. The pickled rod chili broad beans disclosed by the invention take the broad beans as basic raw materials, are added with the nutrition powder, the crucian carp soup, the pickled rod chilies and other various auxiliary materials, are not added with any additive, not only have the light fragrance of the gardenia, but also have the pickled rod chili taste and the fish meat taste and are tasty and hard to cause the inner heat; in comparison with a traditional method for making the broad beans, not only are the nutritional values of the broad beans better kept, but also the broad beans absorb a large amount of nutrient elements in soup, therefore, the healthcare effect is good.
