The invention discloses pickled pod peppers and a preparation method thereof. The pickled pod peppers are prepared from the following raw materials: 65-80 parts of pod peppers, 5-10 parts of ginger, 1-5 parts of Chinese prickly ash, 5-12 parts of garlic, 1-5 parts of table salt, 2-5 parts of granulated sugar, 1-3 parts of white spirit, 0.5-1.5 parts of white vinegar and 4-8 parts of olive oil. Thepickled pod peppers have the characteristics of good mouthfeel and low pungency degree and are simple to prepare and healthy to eat.
