Pickled chilli-Chinese sauerkraut sauce and a processing method thereof are disclosed. The sauce is prepared from following raw materials: carrot, undaria pinnitafida, raisin tree seed, pineapple flesh, tomato vinegar, capsicum frutescens, pickled ginger, natto, yoghourt, wasabi powder, leek flower powder, glutinous rice rhizome and root, cortex albiziae, fiveleaf gynostemma herb, buckwheat leaf, apple mint herb, table salt, a proper amount of olive oil, a proper amount of a black garlic nutrition liquid, and chicken powder. The sauce is sour, spicy, tasty, rich in taste, fresh, fragrant and delicious, can be eaten together with rice or bread by dipping the sauce, and can be used for seasoning in cooking. The sauce is appetizing, promotes digestion and absorption, and is rich in nutrition and reasonable in compatibility. A plurality of traditional Chinese medicines are added, so that the sauce has an antitumor function, an anticancer function, an antibacterial function, and the like, and prevents pickled compounds from causing canceration.
