The invention discloses a passion fruit crispy cake and a preparation method thereof. The crispy cake comprises, by weight, the following raw materials: 450-470 parts of buckwheat flour,120-140 partsof white granulated sugar, 14-16 parts of low fat butter, 20-30 parts of olive oil, 24-26 parts of peanut oil, 80-100 parts of egg, 46-48 parts of whole milk powder, 0.4-0.6 part of baking soda, 4-6 parts of ammonium bicarbonate, 34-36 parts of passion fruit, 5-7 parts of table salt and 32-34 parts of matcha powder. The crispy cake, prepared by preparing material, mixing material, dough kneading,molding, baking, packaging and warehousing, uses black rice flour, which enhances the nutrients of the crispy cake. Compared with a crispy cake added with filling, the juice and peel of the passion fruit are added into the flour of the crispy cake after being processed, the nutrient components of the passion fruit can be effectively retained through low-temperature baking, thereby improving the nutritional value of the crisp cake, the matcha powder is added, the nutrient components of the matcha powder is retained when the crispy cake is baked at a low temperature, and meanwhile, the luster ofthe crisp cake is increased, and the appetite can be promoted.
