The invention belongs to the field of wine brewing, and particularly relates to olive wine with a liver protection effect and a preparation process of the olive wine. The olive wine is prepared from the following raw materials in parts by mass: 700-1000 parts of olives, 1000-1500 parts of white spirit, 300-800 parts of water, 50-100 parts of cyclodextrine, 5-50 parts of sugar candy and 7-50 partsof table salt. The olive wine with the liver protection effect is prepared through the steps of table salt adding and crushing, soaking in the white spirit, filtering, ripening and the like. The olivewine prepared by the method is less in astringent, can decrease the contents of CHOL and TBIL in serum of rats suffering from liver injury caused by alcohol, and has high health care value.
