The invention discloses a method for establishing an olive oil grade identification random forest model. The method comprises the following steps: 1, setting a training set olive oil sample and a QC sample; 2, collecting primary mass spectrum information of the olive oil sample and the QC sample, obtaining a compound information table through compound extraction, and performing standardization processing on data based on the QC sample to obtain a mass spectrum data matrix of the olive oil sample; and 3, screening a significant difference compound as a characteristic variable by adopting WelchT test and difference multiple, and establishing the olive oil grade identification random forest model based on the characteristic variable by utilizing an R language random Forest packet. The invention also discloses an olive oil grade rapid identification method based on the combination of the high resolution mass spectrum technology and pattern recognition analysis, which can identify the olive oil grade based on the olive oil grade identification random forest model, and has the characteristics of high accuracy, simple operation and rapid distinguishing of olive oil of different process grades.
