The invention discloses a mixed roasted sausage. The mixed roasted sausage comprises components in parts by mass as follows: 35-70 parts of mutton, 10-20 parts of pork, 5-10 parts of chicken, 35-70 parts of olive oil, 1.5-2 parts of dried orange peel powder, 1.5-3 parts of table salt, 1.5-3 parts of soy protein isolate, 1.5-3 parts of a MAPEAK2.0 pickling agent, 0.75-1.5 parts of brown sugar, 0.25-0.5 part of MF006 liquid mutton essence, 0.3-0.6 part of monosodium glutamate, 0.25-0.5 part of MAGEL-TA carrageenan, 0.6-1.2 parts of an MS104 roasted sausage flavor, 0.075-0.15 part of a monascus red pigment liquid and 0.004-0.008 part of sodium nitrite. The raw materials not only contain the mutton but also contain the pork, and the prepared finished product by blending in a certain proportionis chewy in taste, not greasy, moderate in saltiness and suitable for all kinds of people to eat.
