The invention belongs to the technical field of food processing, and particularly relates to a making method of bread. The making method comprises the following steps of pouring wheat malt powder, flour, whole milk powder, olive oil, table salt, mixed fruit paste and clean water to a flour pot, performing kneading to obtain smooth dough, then performing heat-insulating enzymolysis to obtain enzymolysis raw dough, adding active dry yeast for the bread to the enzymolysis raw dough, performing sufficient and uniform kneading, and placing the kneaded dough in a thermotank for fermentation to obtain fermented dough; and dividing the fermented dough into small dough, and performing baking in an oven for 18-20 minutes so as to obtain finished products. The bread disclosed by the invention is richin nutrients and functional components of dietary fibers, unsaturated fat acids, multiplex vitamins, gamma-aminobutyric acid, aglycone flavone and the like, and belongs to healthy food and drink pursued by modern people. The dough is subjected to enzymolysis before dough fermentation, so that the defect of being crude in mouth feel is effectively overcome; and besides, in the enzymolysis and baking process, fragrance of fruits can also be activated to the maximum extent, so that the bread is rich in fruit flavor.
