The invention discloses an instant lotus flower pastry and a production method thereof. The instant lotus flower pastry is prepared from the following raw materials in parts by mass: 300 parts of wheat flour, 200 parts of glutinous rice flour, 50 to 100 parts of fresh lotus flower petals, 40 to 60 parts of white sugar, 1 part of table salt, 5 to 10 parts of honey, 4 to 8 parts of edible lotus flower essence, 3 to 6 parts of olive oil, and 1 to 2 parts of alkaline ionized water. The production method comprises the steps: (1) mixing the wheat flour and the glutinous rice flour, and baking; (2) scalding the fresh lotus flower petals, baking until the flower petals are light brown, adding the honey, the white sugar, the table salt and the alkaline ionized water, salting in a sealing manner in an environment of 4 to 6 DEG C for 1 to 2 h, steaming and pounding into paste; (3) mixing the lotus flower petal paste, the baked wheat flour and glutinous rice flour, the lotus edible essence and the olive oil, uniformly kneading, baking, cooling, and packing. The lotus flower pastry has the advantages of sweet taste, nutrition, healthcare, attractive appearance, instant food and convenience. The lotus flower pastry, which is ready to eat, has the advantages of sweet taste, nutrition, healthcare, attractive appearance and convenience.
