The invention discloses health-preserving licorice root fish balls. The health-preserving licorice root fish balls are prepared from, by weight, 200-220 parts of fresh silver carp meat, 6-7 parts of egg white, 4-5 parts of soybean starch, 30-33 parts of lindernia ruellioides, 7-8 parts of roe, 4-5 parts of barbary wolfberry fruits, 4-6 parts of orange peel, 3-5 parts of white sesame seeds, 2.5-3 parts of cattail buckwheat leaves, 1-1.2 parts of hawthorn fruit pulp, 1.3-1.4 parts of licorice roots, 0.8-1.0 part of cream, 0.5-0.6 part of olive oil, 0.4-0.5 part of fresh ginger, 4-5 parts of dietary alkali, 30-35 parts of a tonifying agent, a proper amount of table salt and a proper amount of water. According to the health-preserving licorice root fish balls, fish meat is subjected to fishy smell removal and tenderization through various process steps; by adding various raw materials into fish meat paste, the aroma and taste of the fish balls can be improved, and the quality of the fish balls can be improved.
