The invention discloses halal beef particles and a processing method thereof, wherein the halal beef particles are composed of the following raw materials in parts by weight: 80-120 parts of beef, 8-12 parts of sophora japonica linn, 4-8 parts of diced green onion, 4-6 parts of zingiber striolatum diels buds, 4-6 parts of a tomato paste, 4-6 parts of maltodextrin, 5-8 parts of a pomegranate juice, 5-8 parts of hawthorn, a proper amount of fresh tea leaves, 0.2-0.3 part of ligustrum dela-vayanum hariot, 0.3-0.5 part of sunflower leaves, 0.2-0.4 part of rose hip, 0.2-0.3 part of perilla leaves, 5-10 parts of flos sophorae honey, 1-2 parts of table salt, 2-4 parts of olive oil, and a proper amount of a flavor nutritional agent. According to the prepared halal beef particles, with addition of the sophora japonica linn, hawthorn, buds and other nutritional ingredients, while nutrition is rich, the mouthfeel is adjusted; the fresh tea leaves are adopted for steaming, so that pure and fresh tea fragrance is added, the halal beef particles are fragrant, sour, sweet and delicious; and with addition of various traditional Chinese medicinal ingredients, digestion-strengthening and stomach-invigorating functions are enhanced, and human body health is benefited.
