The invention relates to the field of foods, in particular to goose liver paste and a preparation technology thereof. The goose liver paste is prepared from the following main components in parts by weight: 6-10 parts of fresh goose livers, 0.1-0.3 part of table salt, 0.4-0.8 part of starch, 0.2-0.5 part of sesame oil, 0.4-0.8 part of olive oil, 0.1-0.3 part of rice wine and 4-7 parts of pure water, and is processed through the technologies of cleaning materials, performing uniform mixing, performing packaging, performing sterilization, performing cooling and the like. According to the goose liver paste disclosed by the invention, the soft and smooth degree and the mouth feel of the goose liver paste are significantly improved, and the fishy smell of the goose liver paste is avoided; in addition, the goose liver paste disclosed by the invention is simple and practicable in preparation technology, convenient and practical to operate, and suitable for extensive popularization, the added value of the goose liver paste is increased, and the competitiveness of the goose liver paste is improved.
