An eggplant preparing method comprises the following steps of material selection, pickling, primary processing, stirring and processing, wherein in the stirring step, an auxiliary material is prepared from hawthorn fruit jam, passion fruit juice, cumin powder, olive wine, mountain spring water and table salt.
