The invention relates to the field of food processing, in particular to digestible sweet potato noodles and a making method thereof. According to the digestible sweet potato noodles and the making method thereof disclosed by the invention, the sweet potato noodles are made from raw materials of sweet potato powder, in the making course of the sweet potato noodles, pepper leaf powder, peach gum, wheat flour, pectinate rungia herb powder, semen oroxyli powder, butter, table salt and olive oil are added to be used as auxiliary materials, all the auxiliary materials are in combined action, and through mixing of the peach gum, the wheat flour, the butter, the table salt and the olive oil, the problem of poor cohesion of pasty dough is solved, the cohesion of the dough is promoted, and alum doesnot need to be used in the making course of the sweet potato noodles; and through the pepper leaf powder, the pectinate rungia herb powder and the semen oroxyli powder, the problems that when the sweet potato noodles are eaten too much, abdominal distension and discomfort are caused, burden on the stomach is heavy, and indigestion is caused can be solved, the sweet potato noodles made by the method disclosed by the invention are easy to digest, cannot worsen burden to intestine and stomach, and when the sweet potato noodles are eaten too much, abdominal distension cannot be caused.
