The invention relates to the technical field of food and particularly relates to a crispy minced white gourd stuffing and a preparation method thereof. The crispy minced white gourd stuffing is prepared from the following raw materials in parts by weight: 35-40 parts of minced white gourd, 4-6 parts of dried longan pulp, 0.5-1 part of soybean protein, 8-12 parts of sticky rice starch, 0.4-0.8 part of olive oil, 0.4-0.8 part of tea oil, 6-10 parts of fresh folium artemisiae argyi, 6-10 parts of fresh big-leaf crowndaisy chrysanthemum, 6-10 parts of fresh hypericum japonicum leaf, 2-3 parts of walnut kernel, 2-3 parts of auxiliary material and 1-2 parts of table salt. The stuffing provided by the invention has the advantages of widely available raw materials and low cost; in combination with the freshness and sweetness of white gourd, the specific faint scent of plant and the fragrance of rice, the stuffing has very good mouthfeel and high stickiness and is very chewy; and moreover, the stuffing has low calories and high content of cellulose and realizes certain effect on promoting metabolism and losing weight.
