Chili sauce

The present invention discloses a chili sauce. The sauce is prepared from the following raw materials in parts by weight: 30 to 40 parts of red chilies, 5 to 7 parts of peanuts, 8 to 12 parts of fermented soybeans, 4 to 8 parts of cooking wine, 6 to 10 parts of raw ginger, 6 to 10 parts of garlic, 8 to 12 parts of soy sauce, 4 to 6 parts of white sugar, 5 to 7 parts of isatis roots, 3 to 5 parts of fennel, 3 to 5 parts of star anise, 4 to 8 parts of olive oil, 3 to 5 parts of sesame oil and 6 to 8 parts of table salt. The chili sauce is long in shelf life, and contains no additive or preservative. The chili sauce is green and healthy and tastes better as the shelf life goes by. With the added isatis roots, the chili sauce not only has a smooth and viscous mouth feel, but also has the functions of clearing away heat, removing toxicity, cooling blood and relieving sore throat. The chili sauce of the invention is thick and mellow in taste accompanying with the crispness and faint scent ofthe peanuts, and is delicate in mouth feel, rich in nutrients and unique in flavor.
