The invention discloses chili condiment and a preparation method thereof. The chili condiment is prepared from the following raw materials in parts by weight: 4000-4500 parts of dried chilli, 1000-1200 parts of salad oil, 300-350 parts of olive oil, 600-800 parts of fermented blank bean, 100-150 parts of Chinese prickly ash, 50-100 parts of cassia bark, 50-70 parts of white granulated sugar, 300-350 parts of vinegar, 100-150 parts of dried ginger, 200-250 parts of table salt and 300-350 parts of lemon juice. The chili condiment integrates the fragrance of the Chinese prickly ash, the cassia bark and the dried ginger, and the dried chilli is more fragrant and crisper after being fried on small fire; the fermented blank bean is added into the chili condiment, so that the fresh fragrance of the condiment is improved, and the condiment is soft in texture and better in mouth feel; the addition of the white sugar and the vinegar is beneficial to the overall improvement of delicious degree of the condiment and is more conducive to the improvement of the color and viscosity of the condiment so as to enable the condiment to have more attractive appearance; the finished product of the chili condiment is unique in fragrance, savory and mellow in taste, complete in saline taste, fragrant and piquant and fresh and tender in mouth feel, is suitable for being eaten directly, and can be added into various food.
