The invention discloses a chicken meat mung bean sauce. The chicken meat mung bean sauce is prepared from the following components in parts by weight: 7-16 parts of chicken meat, 6-7 parts of Chinese cinnamon, 20-36 parts of mung beans, 12-16 parts of a flavedo sauce, 3-6 parts of a light soy sauce, and 3-6 parts of table salt. The preparation method of the chicken meat mung bean sauce comprises the following steps of (a), cutting the chicken meat into blocks of 0.6-0.7cm, performing thoroughly cleaning, putting cooking wine, fresh ginger, scallions, five spice powder and pepper powder, performing pickling to enable the pickled chicken meat blocks to be tasteful, and then performing cooking; (b) selecting high-quality mung beans, performing thoroughly cleaning, then performing soaking for 6-7 hours until the mung beans are swollen, then performing cooking over water, and then performing drying in sunshine for standby application; (c) putting olive oil in a container, performing heating until the olive oil is 60-70% hot, pouring the flavedo sauce in the heated olive oil, performing stirring until foam is formed, then stopping heating, performing spreading for cooling, adding the Chinese cinnamon, the light soy sauce, the table salt, the cooked mung beans and the chicken meat, putting the olive oil and the flavedo sauce which are cooled, the Chinese cinnamon, the light soy sauce, the table salt, the cooked mung beans and the chicken meat in a fermenter for fermentation for 7-16 days, finally performing sterilizing and performing canning.
