BOILED SAUSAGE PRODUCT FOR CHILDREN OF UPPER SECONDARY SCHOOL AGE

FIELD: food industry.
SUBSTANCE: invention relates to food industry, specifically to production of cooked sausage products on meat and vegetable base for children of upper secondary school age. Boiled sausage product includes prime grade trimmed beef, prime grade trimmed pork, table salt, ground allspice, a vegetable additive, water, powdered cow milk, granulated sugar, quail eggs, olive oil, cod-liver oil, as spices - nutmeg, as vegetable components includes bulb onions, red carrots, fresh sweet pepper. Vegetable additive used is a mixture of peas and barley seeds at a ratio of 1:1, obtained by CO2-homogenisation. Quantitative ratio of the components is selected.
EFFECT: production of sausage product with improved rheological and organoleptic properties, high nutritive value.
