The invention discloses beef jerky and a processing method thereof. The beef jerky contains the following raw materials in parts by weight: 50-80 parts of fresh beef, 2-3 parts of fresh ginger, 4-6 parts of table salt, 2-4 parts of monosodium glutamate, 4-7 parts of sauce, 5-10 parts of a stewing seasoning, 3-6 parts of olive oil, 4-6 parts of honey, 3-5 parts of spices, 2-3 parts of sesame grains, 1-2 parts of cooking wine and 1-2 parts of apple vinegar, wherein the stewing seasoning contains citronellal and dihydroxy acetone. The beef jerky is produced through pre-boiling, cutting, stewing,frying and baking. The processed beef jerky has strong fragrance, fine meat quality, high elasticity and tenderness, high integrity, rich tastes and sense of depth, contains little disintegrating slagand is accordant with the nutritional, healthy, convenient and pure natural diet manner pursued by modern people; and the processing method is simple, feasible, strong in operability and high in rateof finished products, and has market competition potentials, and the raw materials are saved.
