The invention relates to beef and crisp bamboo shoot instant vermicelli. The beef and crisp bamboo shoot instant vermicelli comprises vermicelli and ingredients, wherein the vermicelli consists of thefollowing components of 50-67 parts of sweet potato powder, 15-21 parts of dried potato powder, 25-35 parts of glutinous rice flour, 8-15 parts of Chinese yam flour, 5-12 parts of powdered beef, 15-20 parts of eggs and 5-10 parts of table salt. A making method of the beef and crisp bamboo shoot instant vermicelli comprises the following steps of firstly making the vermicelli, stirring the made vermicelli in boiling water to obtain cooked vermicelli, performing cooling, and performing baking; and then heating a frying pan, adding a little beef broth, adding cooked diced beef, cooked crisp bamboo shoots, pickled peppers, sour cowpeas, sour garlic and olive vegetables, performing stir-frying, performing cooling, performing bagging, performing loading into a barrel with the treated vermicelli, and performing sealing with a cover.
