METHOD FOR PRODUCING A FOOD PREPARATION COMPRISING FOOD CHUNKS

The present invention relates to a method for producing a food preparation comprising food chunks having a fat content of at least 30 % (w/w), preferably chocolate chunks, the method comprising the steps (a) providing a food preparation at a temperature T1, wherein T1 is above the freezing point of the food preparation or at most 15°C, preferably at most 10°C, especially at most 5°C, under the freezing point of the food preparation in case half-frozen preparations, (b) providing a molten fat composition suitable for foodstuffs with a fat content of at least 30 % (w/w) with a melting point of above T1 and adding the molten fat composition to the food preparation under stirring with a first rotation speed S1, whereupon the fat composition solidifies at least partially, (c1) stirring with a second rotation speed S2 higher than S1 to form chunks from the at least partially solidified fat composition, or (c2) in case S1 is 4 rpm or above, preferably 10 rpm or above, especially 15 rpm or above, a second rotation speed S2 equal or higher than S1 to form chunks from the at least partially solidified fat composition, and (d) completing the food preparation comprising chunks of the fat composition.
