The invention also provides processes for the production of delphinidin 3-O-[2-O-(6-O-p-coumaroyl-glucosyl)-6-O-p-coumaroyl] glucoside 5-O-(6-O-malonyl)-glucoside. Enzymes allowing production of these compounds and genes encoding the enzymes are also provided.
