The invention provides vanilla and tomato red sauce and a preparation method thereof, and relates to the technical field of food processing. The invention provides vanilla and tomato red sauce. The vanilla and tomato red sauce comprises the following raw materials: eggplant paste, tomato sauce, tomatoes, honey, onions, garlic, vegetable oil, fresh basil leaves, dried basil leaves, thyme, bay leaves, fomes officinalis, chicken powder, salt, black pepper powder, white sugar, a yeast extract, a sucrose fermentation product, water, flour and butter. The sauce has the characteristics of ruddy and bright color, rich taste, fragrant smell, nutrition and health. The preparation method comprises the following steps: frying the tomato sauce with olive oil; chopping and frying onion and garlic until fragrance appears, adding flour, and uniformly stirring; mixing the two mixtures, then adding the tomato vanilla and the sucrose leavening, heating and cooking to obtain a mixture; and adding the remaining seasonings into the obtained mixture, and cooling to obtain the vanilla tomato red sauce. The method has the characteristics of simple steps, good storage property, economy and applicability.
