The invention discloses tomato catalytic infrared combined gradient negative pressure peeling equipment, and relates to the technical field of food processing machinery. The device is composed of a catalytic infrared part, a gradient vacuum part and a cylindrical bi-pass sealing device. The catalytic infrared part is provided with a catalytic infrared emitter, the emitter is provided with a fuel gas pipeline used for conveying combustible gas, a support below the emitter is provided with a circle of rollers capable of enabling tomatoes to be conveyed and rotate, the tail end of the emitter is provided with a cylindrical guide rail assembly, the end, close to the rollers, of the cylindrical guide rail assembly is small, and the end, close to the distribution box, of the cylindrical guide rail assembly is large. The gradient vacuum part is provided with two groups of vacuum bins, different vacuum degrees are arranged in the vacuum bins, and an elastic skin rubbing mechanism is arranged in the low-vacuum-degree bin. The cylindrical bi-pass sealing device part is provided with a shell and a rotor, and tomatoes of different sizes can enter silos of different vacuum degrees in a split-flow mode by forming holes of different sizes in the two sides of the shell. The peeling rate of the tomatoes is greatly improved through secondary gradient negative pressure, the peeling loss is reduced, and the peeling quality is improved.
