The invention discloses a soup formula for pickling small intestines, and belongs to the technical field of food processing, the soup formula comprises a plurality of main components including water, chilli powder, a preservative, an antioxidant, a freshener, a spice bag, a flexibilizer and a toner, and the components jointly form a soup base for pickling the small intestines. After pickling, a traditional pickling mode of rubber can maintain better taste and flavor for a long time, oxidation and deterioration processes of fat in food can be slowed down to a great extent, a freshener can bring more complex flavor to small intestines, the small intestines are more layered, the pickling mode of the scheme combines a traditional pickling method with modern seasonings, and the taste of the small intestines is improved. According to the present invention, through the mixing ratio of the monascus purpureus, the carrot juice and the tomato juice, the whole taste has the rich base taste, the small intestine has the distinct color, and the whole color of the white sugar is improved so as to improve the visual effect after the whole pickling.
