The invention relates to the technical field of food processing methods, and particularly discloses a preparation method of tomato sour soup. The preparation method comprises the following steps of: S1, preparing fresh small tomatoes and fresh red peppers, removing inferior tomatoes and remaining superior tomatoes, removing pedicles, performing thorough cleaning, and performing airing to remove moisture; S2, peeling the tomatoes and the red peppers, removing seeds, and performing cutting up; S3, adding fresh ginger and garlic, and performing grinding to obtain pulp; S4, adding seasoning including table salt, peanut oil, sesame oil, litsea cubeba oil and the like; S5, performing sealed fermentation; S6, performing high-temperature sterilization; and S7, performing packaging. The invention aims to solve the problem that in a conventional fermentation process of the tomato sour soup, a natural standing manner is adopted, so that the fermentation time is long, and the production efficiency of the tomato sour soup is low.
