The present invention discloses a potato instant food, and relates to the technical field of food processing, and the main points of the technical scheme are that the potato instant food comprises a main material and auxiliary materials, the main material is potatoes, and the auxiliary materials comprise tomato sauce, chili oil, sesame oil, edible salt, chive, minced garlic, shredded pickled ginger, shredded pickled radish, chili powder, five spice powder and herba houttuyniae; the kang manufacturing process comprises a cooked kang process and a raw kang process. The preparation method has the advantages of scientific ingredient proportioning, scientific temperature control and scientific baking time control, and the finished product is golden yellow in color, crispy in taste, good in color, aroma and taste and ready to eat after a bag is opened.
