Method for rapidly preparing lycopene

The invention relates to a method for rapidly preparing lycopene, which belongs to the technical field of food processing and medicine, and comprises the following steps: 1, adding tomato sauce and ethanol with the purity of more than 95% into a stirring tank, and stirring; step 2, carrying out high-pressure wall breaking on the stirred solution; 3, adding ethanol with the purity of 90% or above into the solution; and step 4, after standing and layering, separating out an upper-layer solution to obtain a product containing 15-18% of lycopene. According to the method disclosed by the invention, the lycopene can be rapidly extracted from the tomato sauce by only about 5 hours, and the method is simple in process and low in cost.
