The invention relates to the technical field of food, and provides honey tomato juice and a preparation method thereof.The honey tomato juice is prepared from tomatoes, honey, purified water, high fructose corn syrup, lemon juice and edible essences, the tomatoes are pretreated before use, the tomatoes are washed clean firstly, then the skins of the tomatoes are peeled off, roots and bases are removed, and the tomatoes are put into the honey tomato juice; the treated tomatoes are poured into a stirrer to be stirred and smashed, tomato juice obtained after stirring and smashing is filtered through a filter screen to obtain a tomato juice crude product, the tomatoes are pretreated before being used, the tomatoes are washed clean firstly, then the skins of the tomatoes are peeled off, roots and bases are removed, and the treated tomatoes are dried; the processing method comprises the following steps: firstly, processing tomatoes, then pouring the processed tomatoes into a stirrer for stirring and smashing, filtering the stirred and smashed tomato juice by using a filter screen to obtain a tomato juice crude product, adopting manna honey as honey, and storing the honey in a heat preservation box at the low temperature of 10-15 DEG C before the honey is used, so that the product can be well protected by processing the materials.
