The invention discloses high-vitamin cherry tomato ice cream and a preparation method thereof, and belongs to the technical field of food processing. In order to effectively reduce the fat content of the ice cream and improve the stability, flavor characteristics, texture characteristics and vitamin content of the ice cream, the invention provides the high-vitamin cherry tomato ice cream and the preparation method thereof, and the main process comprises the following steps: (1) pulping, filtering, homogenizing and sterilizing cherry tomatoes; (2) cleaning and crushing soybeans, carrying out biological enzymolysis to obtain residues, and grinding the residues into slurry; (3) performing centrifugal separation on residues to obtain dietary fibers, performing reduced-pressure suction filtration, performing high-pressure homogenization, and performing freeze-drying and compounding; (4) sterilizing and homogenizing; and (5) freezing after refrigeration. The ice cream prepared by the invention is a whole plant product and has the characteristics of low calorie, low fat, high stability, high vitamin content and the like. Required process equipment is simple, raw materials are wide in source and low in cost, the obtained ice cream is good in quality, and better economic benefits can be created.
