The invention relates to the technical field of food processing, and particularly relates to a formula and a preparation method of spicy sheep heads, spicy sheep hoofs and spicy pork belly. The formula comprises main raw materials and auxiliary materials, wherein the main raw materials comprise 2000g of sheep heads, 500g of sheep hoofs and 300g of pork belly; the auxiliary materials comprise 50g of aniseed, 50g of star anise, 50g of green prickleyash, 50g of red peppers, 50g of Chinese cinnamon, 50g of bay leaves, 50g of fructus tsaoko, 50g of cloves, 50g of fennel fruits, 50g of melissa officinalis, 50g of fructus momordicae, 50g of fructus gardeniae, 50g of cardamom, 50g of radix angelicae dahuricae, 50g of villous amomum fruits, 50g of chili peel, 50g of chili segments, 50g of a chili and spicy chicken paste, 50g of chili fruits, 50g of a thick broad-bean sauce, 50g of spicy fat fish, 50g of a tomato sauce and 50g of a meat treasure. The formula disclosed by the invention is scientific and reasonable, rich in nutrition, unique in taste, spicy, delicious, free from additives, healthy and environmental-friendly, and the preparation method is safe and reliable.
