The invention relates to the technical field of food processing, in particular to a compound seasoning bag containing fermented chilies and tomatoes and a preparation method thereof.The compound seasoning bag is prepared from fresh chilies, dehydrated diced apples, ginger slices, ginger powder, zanthoxylum oil, maltose, diced tomatoes, ultra-flavor essence, garlic granules, xanthan gum, sodium carboxymethyl cellulose, white granulated sugar, edible salt and lactobacillus kefiranofaciens; the preparation method comprises the following steps: dicing fresh chilies, adding edible salt, inoculating lactobacillus kefiranofaciens for anaerobic fermentation, uniformly mixing xanthan gum, sodium carboxymethyl cellulose and white granulated sugar, adding zanthoxylum oil, ginger slices, ginger powder and dehydrated diced apples, heating, adding maltose, diced tomato, extra flavor enhancer and garlic granules, filling, sealing, sterilizing and cooling. The compound seasoning bag containing the fermented chilies and the tomatoes is rich in taste, soft in mouth feel and unique in flavor, the growth of infectious microbes is inhibited in the fermentation process, the content of nitrite and biogenic amine is reduced, and the edible safety of the fermented product is improved.
