The utility model relates to a gamma-aminobutyric acid-enriched tomato powder, produced through a specified process involving monosodium glutamate treatment. The method includes washing and slicing mature green tomatoes, followed by soaking the slices in a monosodium glutamate solution with a concentration of up to 1% by weight. The slices are stored at a controlled temperature of 4-7°C for three days, facilitating the formation of gamma-aminobutyric acid. After storage, the slices are dried in an oven at 70-75°C until the moisture content reduces to approximately 6%. The dried slices are then pulverized into a fine powder, resulting in a product with a moisture content between 8.70% and 13.10% by weight. This gamma-aminobutyric acid tomato powder offers potential health benefits and can be utilized as a functional ingredient in various food and nutraceutical applications, delivering enhanced gamma-aminobutyric acid content derived through a natural tomato processing method.
