Resumen El objetivo de este estudio fue evaluar la influencia del almidón nativo extraído de dos variedades de papa (Solanum tuberosum), súper chola y capiro, sobre las propiedades reológicas, fisicoquímicas y sensoriales de salsa de uvilla (Physalis peruviana), como alternativa natural a la goma xantana en formulaciones de tipo clean label. El almidón fue obtenido mediante extracción húmeda y fue caracterizado en términos de humedad, amilosa y amilopectina. Se desarrollaron 9 tratamientos de salsa variando la proporción de almidón y goma xantana, y se incluyó un control con 100 % goma xantana y tratamientos con sustitución parcial y total del espesante. Las propiedades reológicas se evaluaron mediante la determinación de la viscosidad aparente, mientras que las propiedades fisicoquímicas (pH y sólidos solubles) y sensoriales se analizaron mediante métodos estandarizados. Los resultados evidenciaron diferencias significativas entre tratamientos (p < 0.05). El tratamiento T6 (100 % almidón de súper chola) presentó una viscosidad de 201.97 mPa·s, que es comparable al control (216.67 mPa·s), y sin diferencias estadísticas significativas. Los valores de pH (3.98-4,00) y sólidos solubles (28.32-29.73 °Brix) cumplieron con los requisitos establecidos por la Norma Técnica Colombiana NTC 5583. A nivel sensorial, el tratamiento T6 obtuvo la mayor aceptabilidad general (p < 0.05). Se concluye que el almidón de papa, especialmente de la variedad súper chola, puede sustituir eficazmente la goma xantana en salsas de fruta, ya que mantiene las propiedades reológicas, fisicoquímicas y sensoriales adecuadas. Estos resultados respaldan su potencial como ingrediente natural en la industria agroalimentaria y como alternativa tecnológica en el desarrollo de productos con etiquetado limpio.Abstract The objective of this study was to evaluate the influence of native starch extracted from two potato (Solanum tuberosum) varieties, super chola and capiro, on the rheological, physicochemical, and sensory properties of uvilla (Physalis peruviana) sauce, as a natural alternative to xanthan gum in clean-label formulations. The starch was obtained through a wet extraction process and characterized in terms of moisture, amylose, and amylopectin content. Nine sauce treatments were developed by varying the proportions of starch and xanthan gum, including a control with 100 % xanthan gum and treatments with partial and total substitution of the thickening agent. Rheological properties were evaluated by determining apparent viscosity, while physicochemical (pH and soluble solids) and sensory properties were analyzed using standardized methods. The results showed significant differences among treatments (p < 0.05). Treatment T6 (100 % super chola starch) exhibited a viscosity of 201.97 mPa·s, comparable to the control (216.67 mPa·s), with no statistically significant differences. pH values (3.98-4.00) and soluble solids (28.32-29.73 °Brix) met the requirements established by the Colombian Technical Standard NTC 5583. At the sensory level, treatment T6 achieved the highest overall acceptability (p < 0.05). It was concluded that potato starch, particularly from the super chola variety, can effectively replace xanthan gum in fruit sauces, maintaining adequate rheological, physicochemical, and sensory properties. These findings support its potential as a natural ingredient in the agro-food industry and as a technological alternative for the development of clean-label products.
