Aqueous xylose solutions are prepared substantially free of crystallization-inhibiting substances by hydrolysing crushed and chemically untreated stone fruit shells either by heating to boiling point at atmospheric pressure or by heating at superatmospheric pressure with an aqueous solution of a mineral acid, and separating the undissolved reaction residue from the liquid which is then decolorized and neutralized. The stone fruit shells which may be used are coconut, walnut, hazel nut, brazil nut, cherry, apricot, peach or plum, usually in the form of a meal. The shells may be treated at atmospheric pressure with 2À5-4 parts by weight of aqueous HCl, HBr and/or H 2 SO 4 of total acid content 1À5-6% by weight or at superatmospheric pressure with 2À5-4 parts of said acids of acid content 0À3-1À5% by weight.
