The present invention relates to a method for manufacturing undiluted extract and extracted liquor of stone fruits capable of: markedly reducing ethyl carbamate content, the ethyl carbamate is generated when manufacturing the undiluted extract and extracted liquor of stone fruits like Japanese apricot; excluding the insertion of artificial additives can cause a safety issue (sulfurous acid-based antioxidant including potassium metabisulfite); minimizing a factor causing the generation of the ethyl carbamate in the undiluted extract of stone fruits including Japanese apricot from a leaching step; and being applicable to even the aged undiluted extract of stone fruits like Japanese apricot of which the factor causing the generation of the ethyl carbamate was not excluded at the beginning of aging process, thereby providing the undiluted extract and extracted liquor of stone fruits with remarkably improved functionality and stability.
