The invention discloses an electronic tongue rapid classification method for the numb degree of zanthoxylum bungeanum maxim, and the method comprises the steps: firstly improving a conventional electronic tongue, and employing a platinum plate electrode as a reference electrode of an electronic tongue sensor array; the stability of the electronic tongue signal of each sample is improved by adopting non-cross sample injection; the improved electronic tongue is adopted to collect electrochemical information of the numb degree of the red pepper, and then the numb degree of the red pepper is divided into high numb degree, middle numb degree and low numb degree and then is divided into small numb degree. According to the method, the red pepper to be detected can be quickly pre-classified, and compared with traditional physical and chemical detection or sensory evaluation, the hemp degree classification speed and accuracy are greatly improved; if the detection result is dispute, a more precise instrument can be used for detection; the early-stage electronic tongue is quickly classified, so that the problems of time and labor consumption and excessive sample consumption of a precise instrument can be reduced; the detection accuracy is greatly improved through the classification strategy and technology by firstly classifying the hemp degree into large classes and then classifying the hemp degree into small classes in the same large class.
