Fecha de publicación: -- Fuente: WIPO "hemp" The present invention relates to a hemp sikhye (sweet rice drink) and a manufacturing method thereof, and more specifically, relates to the hemp sikhye that is manufactured by introducing a mixture for manufacturing hemp sikhye comprising raw rice flour, malt powder, hemp seed powder, cinnamon powder, ginger powder, sugar, and purified water into one reactor to simultaneously proceed with extraction, saccharification, and sterilization; and the manufacturing method thereof. The hemp sikhye manufacturing method of the present invention is an invention that: eliminates the hassle of making steamed rice, renders the process of manufacturing a malt extract unnecessary, omits a separate saccharification process for manufacturing sikhye due to the saccharification taking place during the sterilization process, and removes the need for filtration after manufacturing sikhye to enable full utilization of expensive raw materials; and enables the hemp sikhye manufactured by the method to have excellent sensory and nutritional properties due to the addition of hemp seed powder and thus being highly useful in the food industry.
