Abstract
Bioactive ingredients that instigate physiological or nutritional changes in the human body can be referred to as nutraceuticals. Their low bioavailability fosters the search for new carrier systems capable of enhancing the delivery in the intestine. Starch aerogels are a promising alternative that combines the unique properties of an aerogel, such as its high surface area, with the abundance and biocompatibility of starch, among other attractive characteristics. This chapter presents a protocol for the encapsulation of water-soluble bioactive ingredients in starch aerogels. A simple encapsulation method is described, based on the addition of the ingredient to the aqueous starch suspension before the formation of the gel.
