Abstract
Apples stand out as a highly nutritious fruit and play a crucial role in maintaining a balanced diet. In this research, we extensively explore the functional characteristics of products derived from apples, which are rich in essential nutrients and bioactive compounds renowned for their positive impact on health. Additionally, an overview was presented of the natural bioactive components present in apple processing by-products, particularly apple pomace, highlighting their potential as valuable ingredients in a variety of both traditional and innovative products aimed at promoting well-being. These apple-based products and their by-products contain a diverse range of desirable elements, such as probiotics, bioactive phenolic compounds, functional lipids, dietary fiber, vitamins, and minerals. Several of these elements possess strong anti-inflammatory, antithrombotic, and antioxidant properties, which can help reduce the risk of various health conditions. We will explore the mechanisms through which these functional bioactives from apple juice, apple cider, and apple pomace exert their health benefits, as well as the synergistic effects that play a pivotal role in these proposed advantages. Furthermore, we will delve into the appropriate techniques for preserving these bioactive compounds intact and reusing them as ingredients or substrates in specific applications for functional foods, offering a comprehensive discussion on the subject.
