Since a growing number of people are worried about their health and realize that horticultural products are a potent source of useful elements, the horticultural industry is expanding quickly. Nonetheless, a different group of people suffers from dietary deficiencies and is totally ignorant of nutritional security. Horticultural items have a higher moisture content than agricultural products, which speeds up spoiling and loss, hence resulting in a significant loss in this sector. There has been much discussion on the bioactive substances found in the waste parts as well as contemporary methods for extracting them. The wastes’ health-promoting qualities have been explained. The research being conducted on the products made from leftover fruits and vegetables has received attention. The chapter also emphasizes the scopes or future requirements needed for this subject.
