The invention discloses a production and processing method of pitaya freeze-dried slices. The method includes the following specific steps that firstly, complete, undamaged seventy-eight mature pitaya is selected and peeled; secondly, the peeled pitaya is cut into slices with the thickness of 7-9 mm; the slices are placed in a freezer at -30 DEG C to -40 DEG C for primary freezing for 1-1.5 h; fourthly, the temperature is lowered to -50 DEG C to -60 DEG C for secondary freezing and maintained for 2-4 h; fifthly, the completely frozen pitaya is placed in a drying chamber for lyophilization, the pressure of the drying chamber is set to be 0.15-0.2 mbar, the temperature of a heating plate is set to be 10-13 DEG C, heating is conducted for 10-18 h, and after ice crystal of the pitaya slices completely disappear, lyophilization is finished; sixthly, after lyophilization ends, the temperature of the heating plate is set to be 25-35 DEG C, heating is conducted for 8-12 h, and after bound water in the pitaya slices loses, drying ends; seventhly, the pitaya freeze-dried slices are obtained after room-temperature cooling. The freeze-dried slices obtained through the method can maintain rich active components contained in pitaya, and the color and the flavor of the pitaya are maintained at the same time.
