The present invention relates to a method for manufacturing a dumpling using a mushroom and, more specifically, to a method for manufacturing the dumpling using the mushroom, which comprises the following steps of: preparing a mushroom mixture by crushing and mixing Sparassis crispa, Hericium erinaceum, and Cordyceps militaris; washing and pulverizing chicken meat; preparing primary bun stuffing by using leek, cabbage, cellophane noodles, onion, and green onion; preparing secondary bun stuffing by mixing the pulverized chicken meat with the prepared primary bun stuffing; preparing mushroom bun stuffing by mixing the mushroom mixture with the prepared secondary bun stuffing at a ratio of 0.8-1.2:20-50 by mass; and putting the mushroom bun stuffing into a dumpling skin to manufacture a dumpling. In addition, the dumplings manufactured in accordance with the present invention are prepared by using chicken, and thus is different from dumplings which are generally manufactured. In addition, since Sparassis crispa, Hericium erinaceum, and Cordyceps militaris mixed at a constant ratio are mixed with chicken to prepare bun stuffing, the distinctive small of chicken is reduced or eliminated, such that men and women of all ages can eat the dumplings containing chicken without feeling repulsive. Moreover, new dumplings can be consumed by consumers who are looking for a different flavor from the dumplings which are generally produced. COPYRIGHT KIPO 2017
