The present invention relates to a Cordyceps culturing method for producing Cordyceps using chicken in which Cordyceps using chicken is cultured by inoculating Cordyceps bacteria into boiled chicken pieces. According to the present invention, 100 parts by weight of chicken pieces, which is boiled chicken dried to a moisture content of 60-70 %, is inoculated with 10-30 parts by weight of Cordyceps liquid spawn and cultured in dark conditions with a humidity of 60-95 %. The chicken pieces are put into a 750 cc PP bottle and sterilized at a temperature of 115-130℃ and 1.0-1.5 atm, then cooled in a 16℃ cooling room. In order to facilitate culturing of Cordyceps mycelia, the mycelia is cultured for 6-8 days at a temperature of 25-28℃ and then moved to a growth room for cultivation. In addition, a Cordyceps strain is inoculated into the chicken pieces and cultured, and then grown for 50-60 days at a humidity of 85-90 % and a temperature of 20-28℃ to improve fruiting body growth of Cordyceps fungus in the growth room to produce Cordyceps. Accordingly, it is possible to produce high quality Cordyceps with a fast growth rate. COPYRIGHT KIPO 2024
